Breakfast alternatives for busy MPs and the rest of us.

Seed Bar

Time: 10 mins
Costs: $10
Serves: 4

Shopping list
1 cup sesame seeds
1 cup sunflowers seeds
1 cup coconut
1 cup chopped cashew nuts or 1 cup mixed nuts like walnuts, brazil and almonds
1 cup raisins or sultanas
100g butter
1/4 cup runny honey
1/2 cup brown sugar

Method

Heat to toast separately in a small fry pan, the sesame seeds, sunflower seed, coconut and nuts over a medium heat.  Do watch them as they will burn.
Mix with sultanas or raisins in a big bowl.
Heat butter, honey and brown sugar to a soft ball stage, then pour over mixture in bowl.
Mix well, then press into a sponge roll tin, - should be around 2cm deep.
Before they set, cut into bars and store in an air tight container.
Once cut, I pre-wrap for a quick and easy meal on the run.


Rolled Oat Square

Time: 10-15 mins
Costs: $10

Shopping list 
100gm soft butter
1/2 cup brown sugar
1/2 cup flour
1/2 cup rolled oats
1/2 cup oat bran
1/2 cup toasted sesame seed
Baking paper, plastic and a rolling pin
AND maybe 1 or 2 tbsp water - sometimes the water is required if dough doesn't stick together

Method
Line baking tray with baking paper and pre-set oven to 180c
Cooking time around 10-15 minutes or until golden and brown.
Into a food processor add soften butter, then mix with remaining ingredients.
Add water should mix not stick together.
Roll out under plastic on a lined baking sheet to around 5mm.  
Mark into rectangles and bake.
