4 Ingredients - Gluten free recipes - August 24
400g minced pork
1/3 cup GF oyster sauce
8 rice-paper rolls
1 punnet baby snow peas
Heat a non-stick frying pan and brown pork. Season with sea salt and pepper before stirring in oyster sauce. Remove from heat and allow to cool. Take each rice wrapper and lay it in water for 20 seconds. Remove and place on a cutting board. Place an 1/8 of the mince down one edge of each wrapper and top with a generous serve of baby snow peas. Roll up tucking in the ends as you go to secure the content. Cut in half and serve immediately.
Optional: Serve with some GF sweet chilli sauce to dip.
Tip: Dont be tempted to overfill as we first did as the rice paper will split.
A recipe inspired from the Gippsland Harvest Festival, Victoria
500g lean mince
1/2 cup GF fruit chutney
6 potatoes, boiled and mashed
3/4 cup grated cheese
Preheat oven to 180degC. In a non-stick frying pan brown mince, season and mix through chutney. Pour into a casserole dish, top with even layer of mashed potato and sprinkle with grated cheese. Bake for 20-30 minutes or until cheese is nice and bubbly.
Optional: slice a tomato or two over the mince before topping
Chicken Carnival Cones
A recipe by Isobele 'Pruuuu' Whiting that is enjoyed by EVERYONE!
8 GF tortillas
2 cups leftover cooked chicken meat, shredded
1 cup salsa
1 cup grated cheese
Preheat oven to 180degC. Fold tortilla in half if small, fold only the bottom third up) and roll into cone. Fill bottom of cone with chicken, dollop 2 generous tsp. of salsa before covering with a layer of cheese. Place on a paper lined baking tray and repeat the process until all ingredients are used. Bake for 15 mins.

250g GF milk or dark chocolate
100g macadamia nuts, roughly chopped
1 cup GF marshmallows
1 cup GF Turkish delight, roughly chopped
Break chocolate into pieces and melt in microwave on medium high, stirring every 20 seconds. Allow to cool slightly before adding remaining ingredients. Mix until well combined. Line a small rectangle dish with baking paper, pour the mixture into it, neaten edges and refrigerate until set. Cut into desired serving pieces.
Optional: Use nut of choice - almond, hazelnut, Brazil nut etc.

375g pkt dates
2 tsp instant coffee
1 cup GF self raising flour
1/4 cup flaked almonds
Preheat oven to 160degC. Add coffee to 1 cup of boiling water and mix. Pour over dates and soak overnight. Stir in GF flour. Pour mixture into a baking paper lined loaf tin, sprinkle with flaked almonds and bake for 45 minutes.
Optional: Serve warm with lashings of butter.
