Tomato Salad with Fennel Seed Vinaigrette

Nothing can be simpler than a salad of sliced tomatoes fresh from the garden with a slick of tasty dressing.
2 tablespoons red wine vinegar
1/4 cup olive oil
1 teaspoon thick raw honey
2 teaspoons toasted fennel seeds, bruised
6 large beefsteak or heirloom tomatoes
Combine the dressing ingredients and leave overnight for the
fennel flavour to permeate the oil.
Slice the tomatoes into large slices, discarding the tops.
Arrange the tomato slices and sprinkle liberally with sea salt.
Beat the dressing quickly with a fork before drizzling over the tomato slices. If time allows, chill for 10 minutes before serving with hunks of grilled bread drizzled with olive oil.
