Roasted peaches with coconut crumble topping

Roasted peaches

Serves 4
Price per serving (with the mascarpone): $2.98
Total preparation and cooking time - 20 minutes


4 ripe peaches
1 1/2 tbsp (about 20gm) butter
2 heaped tbsp coconut threads
11/2 tbsp plain flour
1 tbsp brown sugar
Two pinches orange zest


Preheat oven to 180degreesC

Cut peaches in half, and lay on an oven tray, cut side up

In a small bowl, place the coconut, flour, sugar, and zest

Add butter, and mix through with your finger tips until you get a crumble consistency

Sprinkle crumble mixture over peaches

Roast for approx 10-15 minutes, until crumble mixture is golden brown

Serve with vanilla ice cream, or with orange mascarpone (which is made by stirring through a heaped teaspoon of orange zest and 2 tablespoons of orange juice and a tablespoon on icing sugar through 200g mascarpone). Garnish with a little fresh mint.
