Green velvet cupcakes

Green velvet cupcakes with white chocolate & whiskey ganache
175ml vegetable oil
125grams white sugar
2 teaspoon white vinegar
1 teaspoon vanilla
1/2 tsp liquid green food colouring
160grams plain flour
1/2 teaspoon baking soda
Preheat the oven to 180oC
Line one 12-hole muffin tray with cupcake papers.
In a large mixing bowl beat together the oil, sugar, egg, vinegar, vanilla and green food colouring until combined.
In another bowl, stir together the flour and baking soda.
Add to the egg mixture, in two or three additions alternately with the buttermilk, beating well after each.
Divide the mixture evenly between the cupcake papers.
Bake for 20 to 25 minutes or until a toothpick poked into the middle of a cupcake comes out clean. Remove from pan and let cool thoroughly.
To decorate: Make a batch of white chocolate and whiskey ganache. Pipe onto the cooled cupcakes. Use green sprinkles, coloured sugar or little green lollies to decorate.
600grams white chocolate
1/4 cup Irish Whiskey
Place the cream and chocolate into a microwave proof bowl. Heat for approx 4 minutes until the cream is almost boiling.
Remove from the microwave and use a whisk to gently combine the chocolate and cream.
