Ep 1 - Potato Cheese Cakes


Potato Cheese Cakes

4 portions

20ml olive oil for frying
600g Agria potatoes
120g Camembert cubed into 1cm cubes
1.5 white onions sliced & caramelized
2tlb chopped oregano
3tlb potato flour
Fresh cracked black pepper

Using 5ml of the oil, sauté onions slowly until just cooked and starting to brown.

Par cook potatoes in cold salted water with the skin on, remove from the water and cool.

Remove skins & discard, then grate length ways into long strands.

In a tray gently combine the grated potato with caramelized onion, cheese, potato flour and oregano and season the mix.

Gently mould the mix into hash browns using a ring mould then shallow fry in a pan for 2-3 minutes on each side to get a nice golden brown colour then place on an oven tray and bake at 180 degrees for 25 minutes. Serve.
