1 bag salad greens
chives or 1 spring onion or a little red onion
1 clove garlic
1 tsp Dijon mustard
salt and pepper
1 Tbsp orange vinegar or lemon juice or red wine vinegar
3 Tbsp olive oil
a little Puhoi Blue Distinction Blue cheese
1 mandarin, in segments
2 Tbsp toasted walnuts
Method: Wash salad greens spin dry in a tea towel. Chop onion/spring onion etc
Rub garlic around salad bowl.Place the mustard and salt (go
light) and pepper in bowl mix well with fork.
Add vinegar and oil. Blend well and then gently toss in remaining ingredients. Serve.
Make this salad last minute - it does not sit well and is best served straight away.
