If you love sushi you will love this reworking of the ingredients to make a super salad on the go - you can vary the ingredients - if you don't like tuna - smoked chicken would work a treat!
2 cups rice
4 cups water
1 can tuna in oil, drained
1 cup chopped cucumber
� capsicum, thinly sliced
1 cup bean sprouts
� cup fresh parsley - if you have a little mint in the
garden add that
2-3 spring onions, finely chopped
� cup finely chopped sushi ginger
Japanese dressing or see below a miso dressing to taste
METHOD
Cook the rice and add the remaining ingredients.
Keep cool and carry away!
To make a miso dressing mix together 25g miso paste, 20ml rice wine vinegar, 6 ml sesame oil, 10 ml light soya, a splash of mirin (opt), 75ml vegetable oil and 25ml water.
You can also combine soya sauce with mirin and rice wine vinegar with delicious results!
