Stuffed Chicken Green Curry


1 Piece Red Capsicum
150g Chicken Breast  
30ml Coconut Cream
1 tsp Fish Sauce
1 tsp Oyster Sauce
1 tsp Sugar
1 Tbsp Coriander, finely chopped
1 Kafir Lime Leaf, finely chopped

Ingredients for Curry Sauce:

1 Tbsp Green Curry Paste
200 ml Coconut Cream
50 ml Chicken Stock
2-3 Tbsp Oil
1 Tbsp Fish Sauce
1 tsp Sugar

Cooking Instructions:

Blend chicken breast, coconut cream, fish sauce, sugar, coriander and kafir-lime leaf.
Stuff the blended mixture in a capsicum and steam for 25 minutes.
Place oil in frying pan on medium heat.
Add curry paste, cook for 2-3 minutes.
Gradually add coconut cream, chicken stock, sugar, fish sauce, stir and cook for 5 minutes.
Pour green curry sauce on steamed stuffed capsicum.
Garnish with finely sliced kafir-lime leaves.
