Healthy Chicken Curry


Ingredients:

1 Tbsp Oil (good quality)
1 Whole Chicken, with all the excess skin and fat removed and chopped into pieces
1/2 tsp Mustard Seeds
1/2 tsp Cumin Seeds
1 Onion, finely sliced
5 Cloves of Garlic, crushed
1 Tbsp Grated Ginger
4 Green Chillies, finely sliced
1 tsp Ground Turmeric
1/2 tsp Chilli Powder
1 tsp Ground Cumin
2 tsp Ground Coriander
1 tsp Salt
4-5 Tomatoes, chopped
1 Cup Water
1 Heaped tsp Garam Masala
2 Tbsp Chopped Fresh Coriander Leaves

Cooking Instructions:

Heat the oil in a pan and add the mustard and cumin seeds.
When the popping and the spluttering of the seeds subsides add the onion.
Cook until the onions turn brown, stirring frequently.
Add the garlic, ginger, green chillies, turmeric, chilli powder, ground cumin, ground coriander and salt.
Cook for a couple of minutes stirring constantly and then add the chicken pieces.
Stir until all the chicken pieces are thoroughly coated with the spice mixture.
Cook the prices until nearly done, stirring occasionally.
Add the tomatoes and water and stir.
When it comes to a boil cover and cook until the chicken is well done.
Add the garam masala and stir.
Garnish with the coriander leaves.
