In a deep frying pan, add some oil to fry chopped onions and
Once aromatic and browned, add the chicken nibbles.
Stir until both sides are slightly cooked and moisture sealed.
Add soy sauce, sugar, pepper, the juice of a whole lemon, and half of the coriander finely chopped.
Cover the lid and simmer until the chicken is cooked well.
Add water if the juice is too thick or dry - enough to have a bit of gravy around the chicken (goes well with steamed rice).
Once the chicken is cooked, add the remaining coriander and stir through.
Serve with steamed rice.
