Week 14: pork fried rice
4 Pork Strips (Full Size or 6 Smaller)
1 Tbsp Dark Soy Sauce
1 Onion Pepper
1/2 Red Pepper
1 Carrot chopped
150g Frozen Peas
100g Chopped Broccoli
1/2 C Chopped fresh coriander
2 C Basmati / 1 1/2 C Jasmine Rice
1 Tbl Canola Oil
2 tsp Sesame Oil
1 tsp Salt
1 tsp Fresh ground black pepper
Skin and finely slice the pork strips
Stir fry until brown in a hot wok with Canola oil.
Remove and drain on paper towels.
Stir fry the eggs until scrambled into fine pieces and set aside with the meat.
Boil the rice until "al dente" and drain and cool.
Stir fry all vegetables in the Sesame Oil until softened.
Add the rice and continue to stir fry, add soy sauce - mix through.
Add cooked pork and eggs until heated, season to taste.
Serve with Soy Sauce to taste.
