FLUFFY OMELETTE WITH CRAB
- 120 gm picked crab meat
- 3 egg whites
- 150 ml cream
- a pinch of salt
- a good pinch of cornflour
- 1-2 spring (green) onions, chopped
- a splash of soy sauce
- 1-2 tbsp vegetable oil
- 1 good handful snowpeas
Bring a little water to the boil and plunge crab in briefly. Drain in a sieve.
Combine egg whites, cream, salt, cornflour, spring onions and soy. Then add to the drained crab.
Heat oil in a non-stick pan and cook as you would scrambled eggs.
Blanch snowpeas in boiling water, drain and arrange on individual plates. Then top with egg mix and serve.
