FLUFFY OMELETTE WITH CRAB

• 120 gm picked crab meat
• 3 egg whites
• 150 ml cream
• a pinch of salt
• a good pinch of cornflour
• 1-2 spring (green) onions, chopped
• a splash of soy sauce
• 1-2 tbsp vegetable oil
• 1 good handful snowpeas

Bring a little water to the boil and plunge crab in briefly. Drain in a sieve.

Combine egg whites, cream, salt, cornflour, spring onions and soy. Then add to the drained crab.

Heat oil in a non-stick pan and cook as you would scrambled eggs.

Blanch snowpeas in boiling water, drain and arrange on individual plates. Then top with egg mix and serve.
