Serves 6 • Preparation time 30 minutes

 

Dressing

6 tablespoons grapeseed oil

4 tablespoons rice vinegar

1½ tablespoons lemon juice

1 teaspoon ginger juice (see method on page 56)

1 teaspoon low-salt soy sauce

 

Salad

¼ savoy or white cabbage, julienned

2 springs onions, julienned

1 red onion, julienned

1 cup shelled edamame

soybeans, cooked

 

For the dressing

1. Combine all ingredients in a small bowl.

For the salad

1. Place salad ingredients in a large bowl and spoon over dressing.

Toss gently to combine. Serve small portions on small plates.
