S2 Ep1: L&V in a hurry and L&V bottle fermented
L&V in a hurry
Makes 6 large drinks
Ginger juice
large knob ginger, peeled
L&V
3 lemons, rind removed and juiced
2 oranges, rind removed and juiced
1 teaspoon citric acid
1 tablespoon Ginger Juice
10 drops bitters
1 cup honey
2 cups water
For each drink
ice as required
sparkling water as required
For the ginger juice
1. Grate ginger onto two layers of muslin.
2. Squeeze juice through muslin into a bowl.
For the L&V
1. Mix lemon and orange juice, citric acid and ginger
juice together.
2. Place honey and water in a saucepan and bring to a simmer. Stir
bitters and juice mixture into the honey mixture and simmer to make
a syrup.
3. Remove from heat and cool.
4. Pour 1/4 cup syrup into each glass over ice, and top with
sparkling water.
L&V bottle fermented
Makes approximately 1 litre
100ml honey
200ml water
3 lemons, rind removed and juiced
2 oranges, rind removed and juiced
1 tablespoon Ginger Juice
10 drops bitters
600ml water
25 granules sweet wine yeast
1. Place honey and 100ml water in a saucepan and bring to a
simmer. Add remaining ingredients and mix.
2. Pour into a strong, clean 1 litre bottle with a screw cap. Store
in a dark warm place for 48 hours only.
Serve, undoing the cap gently to slowly release the pressure
