Pork chopsticks with sweet and sour sauce
Serves 4
Pork chopsticks
Sweet and sour sauce
2 rice crackers, crushed
Place pork chopsticks on plates.
Drizzle with the sweet and sour sauce.
Sprinkle with rice crackers.
Pork Chopsticks
500g lean pork shoulder, sliced into 2 cm cubes
1 Tbsp grated fresh ginger
1 Tbsp olive oil
pinch salt
Thread the pork cubes onto 4 chopsticks.
Mix the ginger, oil and salt together and brush over the pork.
Cover and leave overnight.
Heat a heavy-based pan and add pork and brown on all sides.
Place in oven preheated to 180 C for 5 minutes.
Sweet and sour sauce
1 x 400g can whole peeled tomatoes
4 Tbsp red wine vinegar
4 Tbsp honey
1 knob ginger about the size of a walnut
2 cloves garlic
1-2 Tbsp cornflour
1/2 x 325g can pineapple chunks, in juice
2 red capsicum, deseeded and sliced
Place tomatoes, vinegar, honey, ginger and garlic in a saucepan,
bring to the boil and simmer for 3 minutes.
Remove ginger and garlic.
Thicken with cornflour mixed with a little water.
Add pineapple and capsicum.
