Mud Oven Roasted chicken

1. Light the oven and leave to burn for about an hour
2. Catch you chicken
3. Dispatch, pluck and gut
4. Rub skin with oil and garlic
5. Stuff with innards of gizzard if you are hard core or chop up 3-4 slices of old bread with half an onion, some garlic chives and wet with an egg and a dash of oil and squeeze of lemon
6. Clear remaining embers from oven and place chicken in oven dish in the centre
7. Leave to bake for about 30-45 mins

Cooking time will depend on how hot you got the oven but if you use a good hot burning wood for at least an hour, the mud oven can roast a chicken faster than a conventional oven
