Smoked Kumara Salad

Ingredients

!00g kumara
50g manuka woodchips
1x orange
1T Tatua sour cream
1T mayoneise
1T spring onion or chives
Handful of mesculin or rocket
100g chorizo- sliced
Olive oil
Seasoning

Method

Boil the kumara until just tender, then refresh in cold water to prevent overcooking.
Smoke kumara over woodchips for approx 5-10 mins, until a nice smoke flavour infused with the kumara
Segment the orange, reserving the juice
Mix orange juice with sour cream, mayo, spring onion and seasoning to make the dressing
Sauté chorizo with the smoked kumara, season, then place it on a plate
Drizzle dressing over kumara
Mix orange segments with mesculin and a little olive oil and seasoning, then place on top of the kumara
Finish with a little extra olive oil drizzle over the top
