Samoan New Zealander Oscar Kightley is a critically-acclaimed writer, actor, and TV presenter. After co-creating The Naked Samoans, he worked with the comedy troupe on the hit series bro'Town. Kightley has also worked with the Naked Samoans as a co-writer and actor in the hit feature film Sione's Wedding, and its sequel.
This week on Neighbourhood Marsella Macias brings her Mexican food cart to Te Atatu. She has shared her recipe for a classic Mexican Guacamole. Enjoy!
3 ripe avocados
1/4 cup chopped coriander
1/4 cup chopped onion
1 jalapeño - diced (you can substitute any other green chili or even use a dash of cayenne pepper instead)
1 tbsp of lime juice
salt to taste
Pit avocados into a bowl, add salt and lime juice, mash together. In separate bowl (or mortar) combine coriander, onions, and chilies, mash together, doing this will extract more flavor, especially the coriander.
Combine avocado mixture and coriander/onion mixture, can serve immediately or let chill for an hour. Serve with corn chips, or for healthier snack serve with sliced veggies (carrot sticks, celery sticks, cucumber)
