Scallops and Prawns
Scallops & Prawns with a Paprika Lemon Oil

3 tbsp Lupi extra virgin olive oil
1/2 tsp sweet smoked paprika
3 tsp lemon zest
5 scallops, roe on
1 tbsp Lupi extra virgin olive oil
3 tsp finely chopped flat leaf parsley
salt and freshly ground black pepper
1. In a small saucepan, warm the Lupi olive oil with the
paprika. Remove from the heat and cool a little. Add the lemon
zest, it should gently sizzle. Season with salt.
2. Pat the prawns and scallops dry with paper towels. Heat a medium sized frying pan over high heat with one tablespoon of Lupi olive oil. Sear the prawns and scallops on both sides until just cooked. Season well after cooking.
3. To serve, add the parsley to the paprika oil. Pile the prawns and scallops on the plate and drizzle over the paprika oil.
