Red Curry Paste


Red curry paste

7 dried red chilies
1/2 tsp white peppercorns
1 tsp coriander seeds
1/2 tsp cumin seeds
1 tsp shrimp paste
2 shallots, chopped
5 garlic cloves, chopped
1 lemongrass, white part only, finely sliced
1 tsp ginger, finely sliced
Coriander root
1 kaffir lime leaf, finely sliced

1 Preheat the oven to 180 C.

2 For the red curry paste, Place the chillies in a bowl and cover with boiling water, set aside to soak for 10 minutes, drain then deseed and roughly chop.

3 Fold the peppercorns, coriander seeds, cumin seeds and shrimp paste in foil and place in the oven to bake until fragrant.

4 Place all ingredients in a mortar and using the pestle pound into a smooth paste.
