Pineapple Digestive


MasterChef New Zealand - Three way pineapple digestive

Wafer
80g unsalted Mainland Butter
1/3 cup plain flour
1 1/3 cup icing sugar
75g fresh pineapple, finely diced
Pineapple rice
600mls Anchor Milk plus extra
1/2 cup caster sugar
1/2 vanilla bean, cut lengthways
1/2 cinnamon stick
50g risotto rice
1 egg yolk
1/4 cup Anchor Cream
75g fresh pineapple, finely diced
Grilled pineapple
Olive oil
3 fresh pineapple slices, 1cm thick
Syrup
1/2 cup brown sugar
1/2 cup water
30mls dark rum
1 star anise
4 mint leaves
1/2 mango, pureed

1 Preheat the oven to 170 C.

2 Line a baking tray with baking paper and lightly grease ramekins.

3 Combine Mainland butter, flour, icing sugar and pineapple, place in a food processor and process until smooth. Spread the mixture across the baking tray and cut out 8cm circles, discard excess batter.

4 Bake for 8-10 minutes or until golden.

5 Place over upturned ramekins while warm and fold carefully to form baskets, leave to set.

6 For the pineapple rice, combine Anchor milk, sugar, vanilla bean, cinnamon stick and rice in a saucepan place over a medium heat until sugar has dissolved, reduce heat and simmer until liquid is absorbed and rice is creamy, stir occasionally, add more milk if needed.

7 Remove from heat and discard cinnamon stick and vanilla bean, combine the egg yolk and Anchor cream in a bowl, add to the rice, return the saucepan to a low heat and cook a further minute, stirring continuously.

8 Remove from heat and fold through the pineapple.

9 For the grilled pineapple, Heat a griddle pan over a high heat, brush with olive oil and cook each side for 1-2 minutes or until golden.

10 For the syrup, combine sugar, water, rum, star anise and mint leaves in a saucepan and place over a medium heat, bring to the boil, reduce to a simmer and reduce to a thick syrup. Set aside to cool. Fold in mango puree.

11 Place a pineapple wafer on a rectangular serving plate, spoon rice into the wafer, place grilled pineapple slices to the side and pour over the syrup to serve.
