Paprika Panko Crumbed Fish

Paprika Panko Crumbed Fish, sweet Potatoes and Gherkin Chips with Gherkin and Dill Sauce

Serves 2

Gherkin and Dill Dressing
Reserved juice from gherkins
2 egg yolks
125 ml Lupi Olive oil
1 tsp dill, finely chopped

Gherkin Chips
3/4 quantity of gherkin dressing
1 tbsp rice flour
8 long slices sweet gherkins

Kumara Chips
1 large red kumara, cut into slices the same size as the gherkins
Pinch of Chinese 5 spice

Paprika Panko Crumbed Fish
2 snapper fillets, bones, scales removed
1 cup rice flour
2 eggs, lightly beaten
1 cup panko breadcrumbs
1 tbsp smoked paprika

Dill sprigs, to serve

1. To make the gherkin and dill dressing, whisk together the egg yolks with 1 tablespoon of the pickling solution from the gherkins. Whisking continuously, drizzle in the Lupi Olive oil in a slow, steady stream until the dressing is thick and creamy. Set aside 3/4 of the dressing to use for the batter. With the remaining 1/4, mix through the chopped dill, season to taste with salt and pepper and set aside.

2. To make the gherkin chip batter, mix the dressing with the rice flour until well combined. Heat a deep fryer to 180C. Pat the gherkin dry and dip into the batter. Deep fry until crisp, drain on paper towels and season with salt.

3. To make the kumara chips, place the kumara in the deep fryer and fry until crisp and golden. Sprinkle with salt and a little 5 spice. Keep warm.

4. To crumb the fish, prepare three pané bowls; 1 with rice flour, 1 with egg and one with the panko crumbs combined with the paprika, salt and pepper. Coat the fish in flour, then egg, then crumbs. Place each fillet in the deep fryer and fry until golden and cooked through. Drain on paper towels and season with salt.

5. To serve, place the kumara and gherkin chips on a serving plate and place the fish next to it. Serve with a side of gherkin and dill dressing and top with a sprig of dill.
