Lamb skewers
MasterChef New Zealand Canapes - Lamb skewer with capsicum relish
500grms lamb, minced
1 egg
30grms breadcrumbs
100grma, raisins
80grms pinenuts, roasted and chopped
30grms, chili, finely chopped
Wooden skewers, soaked
Capsicum relish
1 tsp orange oil
200grm red capsicum, small dice
200grms yellow capsicum, small dice
100grms Pattaya mango, peeled, small dice
1 tsp mustard seeds
100mls Campbells Real Stock Chicken
1 tsp red thai curry paste
1 Tbs sweet chili sauce
1 Tbs Spanish 'gerauchertes'
Paprika powder
Red chard, to serve
1 For the lamb skewers, combine the lamb with the egg,
breadcrumbs, raisins, pinenuts and chili in a bowl, season with
salt and pepper and mix well to combine. Shape into 8cm long rolls;
stick the rolls onto the wooden skewers. Set aside.
2 For the capsicum relish, Heat the orange oil in a saucepan over a
medium heat, sauté the capsicums and mango dices. Add the
remaining ingredients and allow to cook for 15 minutes, remove from
heat and allow to cool.
3 Spoon a small amount of chutney onto a serving spoon top with a
lamb skewer, topped with red chard to serve.
