1kg tomatoes, quartered
1 small brown onion, sliced
25g brown sugar
1 cup malt vinegar
3 tsp pickling spices, in a muslin cloth (see recipe)
1 clove garlic, finely chopped

1. In a large saucepan, simmer tomatoes and onion until soft.
Add the remaining ingredients except the Worcestershire. Stir with
a wooden spoon and simmer until thick. Remove the muslin cloth,
blend the sauce and add Worcestershire sauce. Set aside to
2. Once cooled, use a piping bag or a generic resealable plastic bag with the corner cut off to fill the small sauce tube with sauce. Use pliers to seal and fold the end of the tube. Alternatively, serve sauce in a small dish on the side.
