Episode 7 - Kina Rouille

Kina Rouille:

1 clove garlic
Pinch Marlborough saffron
1 tbsp. white wine vinegar
2 egg yolks
1 tbsp. Dijon mustard
150 ml olive oil
5 kina roe, drained
1 tbsp. lemon juice
Salt & pepper

In a mortar and pestle place the garlic with a pinch of salt & the saffron. Beat with the pestle until a paste is formed. Add the vinegar and mix to a smooth paste.

Place the garlic paste into a stainless steel bowl and add the egg yolks, lemon juice & mustard. Whisk constantly while drizzling the oil in slowly to form an emulsion. Once thick whisk in the kina to taste and then pass through a sieve. Season well.
