THE DUKES STRAWBERRY PATCH

(100 portions)

INGREDIENTS

Panacotta

8lt Cream

4lt Milk

1200gm Sugar (to taste)

4Tbsp Vanilla extract

72leaves Gelatine

Strawberry gel

2kg Strawberry puree

14gm Agar agar

Strawberry jelly

2kg Strawberry puree

1lt Sugar syrup

24 leaves Gelatine

Chocolate paint

500ml Grape seed oil

500gm Chocolate

Garnish

200 Strawberries (halved)

Chocolate soil (Robo-coupe chocolate)

Micro greens

Chocolate shards

PANACOTTA

Separate gelatine and allow to bloom in iced water for 5 minutes.

Bring all other ingredients to heat but not to the boil.

Add well drained gelatine leaves and stir until dissolved. Taste!!!

In a large bowl over iced water, slowly chill the panacotta, stirring frequently to avoid lumps.

When the panacotta is thick but not set. Pour gently into greased dariole moulds up to half way.

Pour a tablespoon of fluid gel into the centre and gently cover with more panacotta mixture.

Refrigerate immediately. Allow to set before use.

 

STRAWBERRY GEL

Dissolve agar agar into strawberry puree, then gently bring to a light boil. Allow to gently boil for 2 minutes, then chill rapidly with a tray and an ice bath.

Once set, blend with a stick blender to make fluid gel.

 

STRAWBERRY JELLY

 

Separate gelatine and allow to bloom in iced water for 5 minutes.

Mix strawberry puree and sugar syrup together then bring to a gentle heat just below boiling.

Whisk in drained gelatine well then transfer into lightly grease containers to set.

 

CHOCOLATE PAINT

Gently melt chocolate into oil to 50 ̊. Allow to cool and reserve for service

CHOCOLATE SHARDS

Melt chocolate carefully.

Spread thinly onto baking paper lined trays and allow to set

 

TO SERVE

 

Brush a line of chocolate paint across the centre of the plate.

Place panacotta in the middle of chocolate paint.

Garnish with chocolate soil, strawberry halves, broken pieces of jelly, chocolate shards, strawberry gel and micro greens
