Episode 3 - Gozleme - Recipe by Fiona and Bronwyn
1 Cup Self raising flour
1 Cup Greek yoghurt
1 Garlic clove
250g Lamb mince
1/2 Tinned tomatoes
1/2 tsp Corriander
1/2 tsp paprika
1/4 tsp Chilli flakes
1/2 Cup Yoghurt
1/4 Cup Grated and squeezed cucumber
1/2 Cup Snow peas
1/2 Cup Cucumber julienned
1/2 Cup Asparagus
1/2 Cup Rocket
2 tbsp Olive oil
1 tbsp Lemon juice
1/2 tsp Wholegrain mustard
Preheat oven to 180 degrees,
Gently combine the slef raising flour and yoghurt together and set aside to rest for 10 minutes.
saute the onion, garlic and lamb mince untill well brown. Add in the spices and cook untill you can smell the aroma.
Add in tomatoes and reduce down.
Blanch the spinach, Slice the feta and dry roast the pinenuts.
Divide the dough into 4 and roll on a floured sufrace to 20cm diameter.
On one half of the dough layer the mince, spinach, feta and pinenuts. Fold over and fry on a griddle pan. Finish in the oven.
Mix together the yoghurt, cucumber and cumin, season well,
Make a dressing with the olive oil, lemon juice and mustard , dress the salad and place on the plate, bring out the Gozleme and place on the otherside of the plate, place a spoon of Tzatziki on the side.
