Episode 11 / 12 - Gone Fishin
1 Bluenose fillet (approx. 100g)
2 tbsp Light soy sauce
2 tbsp Dark soy sauce
1 tsp Maggi seasoning
1 tsp Sugar
2 tbsp Water
1 tsp Canola oil
1 pinch Salt
1 pinch Ground white pepper, to taste
2 Egg whites
For the marinade, combine the soy sauces, maggi seasoning, sugar and water. Marinade the bluenose for 15 minutes.
Bake the fillets at 150 degrees for 8 minutes, then turn the heat up to 200 degrees, and bake for a further 8 minutes or until just cooked.
For the scrambled egg whites, combine the egg whites, salt, pepper and milk. Rapidly cook in an oiled pan over high heat while whisking with a fork until firm.
To plate, press the egg whites into a round ring cutter of approx.5 cm. diameter. Wipe up any drained moisture. Blanch the samphire in boiling water for about 30 seconds, then place on top of the egg white. Top with the bluenose fillet.
