Dumplings
20g Butter
1/3 Cup Dried apricots
1/2 Cup Lemon zest
1 Cup Self raising flour
1 Egg lightly beaten
1/4 Milk
 
Syrup
1 1/2 Cup Water
3 tbs Golden syrup
1/2 Cup Brown sugar
40g Butter
1 tbsp Lemon juice

Rub together butter and flour intill it becomes the texture of fine bread crumbs, then add lemon zest and apricot

Whisk together egg and milk pour into the dry ingredients. Work together untill a dough is formed.

Knead the dough on a lightly floured surface, untill dough becomes smooth and silky.
Roll into 20 even sized balls

For the syrup, combine all ingredients in a large saucepan, still over a low heat untill sugar has dissolved, bring to boil to cook the dumplings

Lower batches of dumplings into the syrup and cook untill the dumpling float about 5-7 minutes. Serve with a drizzle of golden syrup over the top.
