Episode 1 - Lamb rack with spinach by Sam and Collette

1 Lamb rack
5 Agria potato, peeled.
1 tbsp honey
1/4 cup Balsamic
1 Sprig Rosemary
115g Butter
50g Cream
Salt
Pepper
2 cloves Garlic paste
1 Tbsp Olive oil

Pre heat oven to 180 degrees. Season the Rack and bring up to room temperature with some rosemary.

Chop the potato into 3cm cubes and boil for mashed potato, 15 minutes.

In a hot pan, add the olive oil and brown the lamb rack on all sides, Place into oven and cook for 15 minutes or untill desired degree.

Strain the potato, and mash through a fine seive, and gradually work in 100g of diced butter. Heat the cream and beat in.  Add the honey and balsamic to a saucpan and reduce untill syrup consistency

Saute the spinach in 15g of butter and the garlic paste, season and drain on a paper towel. Serve by cutting the rack, and placing ontop of the mash and spinach. Garnish with balsamic glaze.
