1 1/2 Cup Fresh breadcrumbs
1 1/2 Cup Milk
1/2 tsp Vanilla essence
3 Egg yolks
1 Cup Frozen mixed berries
1 Cup Castor sugar
1 Lemon zested
3 Egg whites

Grease 4 ramekins preheat oven to 165 degrees

Put breadcrumbs with 1/4 cup sugar and lemon zest, Heat milk in a pot on low heat for 5 minutes add vanilla , pur over the dry ingredients and mix together let the mixture cool before adding the egg yolks, mix well and spoon into ramekins and bake for 20 minutes

Place berries in saucepan with a tablespoon of castor sugar cook on a low heat untill sugar has disolved

Whisk eggwhites with the left sugar untill stiff peaks form - bring out pudding in the oven and spon 2 tablespoons of berry compote and cover with meringue mix. Place back in the oven for 8 minutes or untill golden. Serve in the ramekin
