MasterChef New Zealand - Chicken, sage and pork sausage

100g chicken thighs
100g pork
1 garlic clove, finely chopped
1/2 onion, finely diced
1 Tbs sage leaves, finely chopped
Sausage skin casing

1 Roughly chop the chicken and pork. Place in the bowl and combine with the garlic, onion and sage.

2 Place the mixture in a sausage machine and mince.

3 Change attachments and carefully push the mince through the sausage machine to make sausages.

4 Place the sausages in a saucepan and cover with water, place over a medium heat and simmer for 6-8 minutes to par bowl.

5 Heat an oiled frying pan over a medium heat, fry the sausages until cooked and golden.

6 Serve.
