Beef Burger with Fresh Pineapple Salsa

Burger Patty
300g minced sirloin steak
2 cloves garlic, minced
1/2 tsp ground garam masala
1 tbsp golden syrup
Salt and Freshly ground black pepper
2 spring onions, finely sliced
1 tbsp flour
2 eggs, lightly beaten
30g Kikorangi blue cheese, crumbled

Pineapple Salsa
1/4 pineapple, peeled, core removed, diced 
1/2 mango, peeled, diced
1 tomato, core and seeds removed, diced
1/2 tsp smoked paprika
Juice and zest of 1 lemon
1 tbsp coriander, finely chopped

Tomato Chutney
1 tbsp Lupi Olive oil
1 tomato, diced
2 spring onions, chopped
1 tsp smoked paprika
1 tbsp golden syrup
2 cloves garlic, minced

2 egg yolks
1 clove garlic, crushed
Zest and juice of 1 lemon
1 tsp smoked paprika
Salt and freshly ground black pepper
1 cup vegetable oil

2 hamburger buns, toasted
1 handful mesclun leaves
1 beetroot, roasted, peeled, sliced

1. To make the burger patty, place all of the ingredients in a large mixing bowl and combine well with clean hands. Cook a little of the mix to test for seasoning and adjust with salt and pepper if required.

2. To make the pineapple salsa, combine all of the ingredients in a mixing bowl and set aside to infuse. Drain off excess juices before using.

3. To make the tomato chutney, heat the Lupi Olive oil in a saucepan over medium heat and add the rest of the ingredients. Cook out until thick and jammy.

4. To make the aioli, place the egg yolks, garlic, lemon zest, juice, smoked paprika and salt and pepper in a small food processor and blitz until combined. With the motor running, pour in the oil in a slow, steady stream until the mixture has a thick, creamy texture.

5. Preheat oven to 180C. To cook the burger patty, heat a little canola oil in a grill pan over medium high heat. Place the patty in the pan and grill until nicely browned on both sides. Place the pan in the oven for the burger to finish cooking through.

6. To assemble the burger, place the burger base bun on a serving plate and top with aioli. Add lettuce, then the patty, tomato relish, pineapple salsa and beetroot. Top with the top bun.
