Salsa Verde Cruda (Green Raw Salsa)

Makes 2 cups

10 tomatillos
1 clove garlic, roasted
1 jalapeño pepper, charred, skin removed
1/2 large brown onion
1 large bunch coriander
Juice of 1/2 a lime
1 small bunch of epazote
salt and freshly ground black pepper
1 avocado, cut into large dice

1. Blend all ingredients together, season to taste with salt and pepper, then carefully fold in the avocado chunks.

2. For a second option, blend and drizzle in 2 tbsp oil. You can cook the ingredients before blending. Serve with tacos
