Parmesan cigars


Spanish Blue Cigar with Manuka Honey

Serves 5

75g Perfect Italiano Parmesan, grated
50g Spanish Picón blue cheese or Gorgonzola Piccante
5 tsp manuka honey
1 tsp truffle oil
Port, for serving

1. Divide the Perfect Italiano Parmesan into five equal portions. Working with one portion at a time, spread each serving of cheese into an 8cm circle on a small ?at plate. Microwave on high power for 30-40 seconds.

2. As soon as the cheese melts and starts to bubble, remove the plate from the microwave As soon as the cheese melts and starts to bubble, remove the plate from the microwave and immediately place one fifth of the blue cheese in the centre, along with 1 teaspoon of honey and a couple of drops of truffle oil. Working as quickly as possible, roll up the melted cheese to form a cigar shape.

Serve with a favourite port.

Tips

- Whilst cooking, watch carefully, as the cooking time will vary depending on the microwave's power

- Once the cheese has bubbled and is removed from the microwave, it needs to be handled quickly before it hardens and becomes difficult to roll.
