Prawns A la Plancha
12 green king prawns peeled and de-veined
1 tbsp olive oil
100g butter, melted but still warm
5 garlic cloves sliced
1 tsp chilli flakes
1/2 tsp chilli powder
1/4 bunch parsley, roughly chopped
1/4 bunch coriander, roughly chopped
1/4 bunch oregano, roughly chopped
lemon wedges/lime wedges, for garnish
salt and pepper, to taste
- Place prawns olive, butter, garlic, chilli flakes and chilli powder in a bowl and toss to coat prawns. Allow to sit for 5 mins.
- Heat plancha/grill over high heat until very hot. Saut prawns until cooked through, about 3 minutes. Add sherry vinegar and deglaze plancha. Transfer prawns and all cooking juices and butter to a serving dish. Sprinkle with chopped herbs. Season to taste and garnish with lemon/lime.
