Episode 19 - Scones

600g self raising flour

2 tbsp icing sugar

100g butter, diced and chilled

300ml milk, plus 40ml to brush scones

  • Preheat oven to 180C.
  • Sift flour and icing sugar into a large bowl. Using your fingers, rub in the butter so that it resembles fine breadcrumbs.
  • Using a butter knife, mix in milk to form a sticky dough. Dust the bench with flour and tip mix onto the bench. Roll dough to 2cm thick and using a 7cm cookie cutter, cut out 12 scones. Transfer scones onto a lined baking tray. Brush the scones with milk and bake until golden brown, about15 minutes.
  • Remove from oven and serve with jam, strawberries and whipped cream.
