Egg and Prawn Fried Rice

Serves 4

 

1 tablespoons peanut oil

2 eggs, lightly beaten

2 cloves garlic, crushed

3 teaspoons finely grated ginger

6 spring onions, finely sliced

1 carrot, finely diced

4 cups cooked basmati rice

200 grams shrimp, peeled

4 baby corn, finely sliced

1 bunch gai lan, separated

2 tablespoons oyster sauce

¼ cup light soy sauce

1 teaspoon sesame oil

fried shallots, to serve

  

  1. Heat a wok over high heat and brush with 1 teaspoon peanut oil. Add half of the egg and swirl wok to make a thin omelette. Cook for 1 minute or until cooked through. Remove from wok and set aside. Repeat with remaining egg. Roll omelettes and slice thinly. Set aside.
  2. Heat remaining oil in wok and stir-fry garlic, ginger, spring onion, and carrots until fragrant, about 1 minute. Return omelette to wok, along with rice, shrimp, baby corn and gai lan and cook for 2-3 minutes or until gai lan wilts. Stir through sauces and sesame oil.
  3. Serve with fried shallots.
