Ep 31: Sumac school prawns

1L vegetable oil, for frying
200g green school prawns, unpeeled
75g (1/2 cup) plain flour
70g (1/2 cup) cornflour
2 tablespoons sumac
Good pinch salt
1 Half-fill a deep fryer or wok with oil and heat to 180°C.
2 Whisk flour, cornflour, sumac and salt and pepper together until combined. Toss prawns in mixture until evenly coated, shake off excess.
3 Deep-fry prawns, in small batches for about 2 minutes or until crisp. Drain on paper towel.
