Sesame Crusted Tuna with Orange and Sake Dipping

1/4 cup sake
1 orange, juiced
1 tbs rice wine vinegar
1 tbs soy sauce
1 tbs mirin
1/2 tsp sesame oil
1/4 cup golden sesame seeds
500g tuna steak, halved horizontally
micro red mustard greens, to serve
1. To make the dipping sauce, combine the sake, orange juice, rice wine vinegar, soy sauce and mirin in a small saucepan over medium heat. Simmer for 8-10 minutes or until reduced by a third. Set aside to cool. Once cool, stir through sesame oil.
2. Combine sesame seeds, salt and pepper in a shallow dish. Coat tuna pieces with sesame mixture, pressing firmly with your fingertips.
3. Heat oil in a large frying pan over medium-high heat. Sear tuna on all sides, about 2 minutes for rare or until cooked to your liking.
4. To serve, slice tuna into 1cm pieces and arrange on a plate with the dipping sauce. Garnish with micro mustard greens.
