Keep Calm and Carry On on TV ONE and TVNZ Ondemand

CARROT CAKE - MICROWAVE STYLE 

3 eggs
1 1/2 cups sugar
1 cup oil
1 tsp. vanilla
1 1/2 cup flour
3/4 tsp. salt
1 1/4 tsp. baking soda
2 1/2 tsp. cinnamon
1 tsp. cloves
2 1/2 cups grated carrots (4-5)
3/4 cups chopped nuts

In a large mixing bowl, combine eggs, sugar, oil and vanilla. Blend in flour, salt, baking soda, cinnamon and cloves. Fold in carrots and nuts. Pour into 12 cup microwave bundt pan. Microwave high (100 percent) 12 to 14 minutes, rotating 1/4 turn every four minutes. Rest 10 minutes.

Loosen sides and center; invert on serving plate. Frost with cream cheese frosting. (Cake will release better if you grease and sugar the pan with granulated sugar.)

If being good, dust with sugar and serve with yoghurt.  If being naughty, slather on cream cheese icing and serve with whipped cream!
