Smoked Eel Pate

Step 1  

Ingredients

200gm                  Smoked Eel  ( skinless, boneless ) 
1/2 Cup                  Sour Cream
2 Tbl                    Cream
1 and a half Tbl                Lemon Juice
1 and a half Tbl                Chives ( Fine dice )
1 Tbl                    Dill ( Fine dice )
-                          Salt and Pepper

Method

Take the Eel and dice until nice and fine. Place in a bowl and add the sour cream, cream, lemon juice , chopped chives and dill. With a spatula or wooden spoon, mix all together . Check the seasoning adding salt and pepper to taste. Refrigerate until required.


Step 2        Plating and Serving.

Ingredients

-Smoked Eel Pate
-Assorted Crackers , Croutons or Crusty Bread.
-Half Lemons

Method

Place the Eel pate  in a serving bowl and surround  with the crackers etc. Garnish with a couple of half lemons. Great match with nice cold lagers.
