Logan and Brown head over the hill from Wellington to Castlepoint on the Wairarapa Coast where they make one of their favourite holiday meals - sautéed paua wrapped in fresh white bread.
Brownie meets up with Matai Broughton who reckons he can show him a decent sized paua or two further up the coast. While they wait for the tide to go out, Matai's wife Kura cooks Brownie her famous paua soup. Then Matai takes Brownie snorkelling for these slow-growing vegetarians that take seven to ten years to reach the legal minimum size of twelve and a half centimetres.
Meanwhile Logie heads to the reef at Castlepoint to try his luck catching kahawai. Later he visits a home garden for rocket, coriander and lemons, and then heads into Masterton for fresh white bread from Breadcraft Factory and a bottle of Borthwick's Riesling.
The kahawai is smoked before Brownie returns with Matai and
Kura. They build the fire on the beach, shuck the paua and prepare
the other ingredients for the butties. The paua is thinly sliced
and sautéed quickly in a very hot pan with onion, garlic,
chilli and coriander. A squeeze of lemon, salt and pepper, and it's
ready to put between two slices of bread with the fresh rocket.
