Sonny Harrison's Tuatua Fritters
Ingredients:
500gms Tuatuas
1 onion
1 - 1 1/2 Eggs
Cornflour
Method:
After gathering the tuatua, sit them in fresh seawater for
an hour, this will enable the tuatua to spit out any
sand.
Shell them into a bowl - about 500 gms when shelled.
Peel and dice 1 average sized onion and with the tuatua, put
through mincer.
Add 1 - 1 1/2 eggs to help bind the mixture, and also a small
amount of corn-flour thickening, to add body to the mixture.
Place mixture (saucer sized) into a medium heated and well oiled
pan until medium brown on one side, then flip over until the same
colour is reached on the other side.
Allow to cool slightly, then enjoy!
