Marion's American 4th July pumpkin pie


Serves six - eight people

Ingredients

Filling:

700gm pumpkin
4oz brown sugar
Pinch salt
1 1/2 tsp cinnamon
1/2 tspn ginger
1/4 tspn cloves
3 eggs, lightly beaten
300ml cream

Pastry:

6oz flour
1/4 tspn salt
3 oz butter
2-3 tblsp iced water

Method:

Step 1.  Pastry

Combine flour and salt and, rub in the butter and then add the iced water. Wrap the pastry up and chill for 30 minutes in the fridge. Remove from fridge and roll out - the less handling the better. Cut to a 9" pie dish or other suitable dish. Line the dish with baking paper and lay the pastry in.

Step 2. Filling

Boil, mash and drain the pumpkin. Lightly beat the eggs and add to the pumpkin with all other ingredients. Whip everything up with an electric beater. The pour the filling into the pie crust. As easy as that!

Bake for 45-50 minutes at 190C.

Cooling the pie before eating will help it set.
