Dick Ryan's Battered Oysters
Ingredients:
1 doz shucked oysters
1/4 tsp salt
2 eggs (beaten)
1/2 cup cornflour
Pepper
Method:
Drain shucked oysters. Dry thoroughly on paper towels and
refrigerate while you make the batter.
In a bowl, combine cornflour, salt, and pepper. Stir dry
ingredients into beaten eggs. Beat until smooth. Cover and chill
before using.
Heat fat in deep skillet. Dip oysters in batter a few at a time.
Fry oysters in hot fat until golden brown, remember you only need
to cook the batter, not the oyster.
Drain hot oysters well on paper towel.
