Winter Salad
Serves 4

Ingredients
1 cup wild rice - cooked as directed, cooled
1 cup quinoa - cooked as directed, cooled
2 cups pumpkin - roasted
1 cup rocket leaves
1 cup parsley leaves - sliced
1 cup basil leaves - sliced
1/2 cup mint leaves - sliced
1/2 cup pecans - toasted
1/4 cup walnut oil
1/4 cup sherry vinegar
1 cup radishes - cut into thin slices
2 shallots -finely diced
1/4 cup olive oil
1/2 cup dried cranberries
4 slices prosciutto
Method
Combine ingredients except prosciutto and season to taste.
Lay the prosciutto over the top and serve.
