Wicked Turkey Stuffing

Wicked Turkey Stuffing

Preparation time: 35 minutes

Ingredients
12 dried apricots, chopped
6 prunes, chopped
2 tbsp dried cranberries, chopped
8 sprigs fresh thyme, chopped
1/4 bunch flat-leaf parsley, chopped
1/4 cup toasted brazil nuts, chopped
Zest and juice of 1 orange
1/4 loaf sourdough 
1/4 loaf ciabatta
2 eggs
Sea salt
Cracked pepper
Unsalted butter

Method
Roughly chop or pulse the ciabatta and sourdough in a food processor, then mix in the remaining stuffing ingredients and season with salt and pepper.
Mix until they are well combined, being careful not to over-mix as the stuffing will lose it's lovely rough texture.
Place aside, ready to stuff the turkey.
