White Chocolate and Pistachio Gelato

White Chocolate and Pistachio Gelato

Serves: 6-8 people
Preparation time: 25-30 min

Ingredients
1 cup milk
2 cup heavy cream
5 egg yolks 
1/2 cup sugar
2 tsp lemon
1 tsp vanilla
200g white chocolate
50g chopped pistachio or pistachio paste
1 cup mascarpone cheese
1 tsp baileys or hazelnut liquor or pistachio

Method 
Combine egg yolks and sugar, and whisk it till becomes pale yellow.
Boil cream and milk let it cool and then slowly add to egg mixture. Also, add liquor to the mix.
Cook the mixture on a double boiler, till the mixture coats the back of the spoon, and refrigerate the mixture.
Melt white chocolate on a double boiler.
Add white chocolate, and fold in mascarpone cheese, with vanilla essence, and lemon juice.
Freeze the mixture for 45 min, remove and add pistachio.
Freeze the mixture again for 45 min and remove churn the mixture by hand.
Freeze the mixture overnight and its ready to serve.
